Vegan nut butter porridge recipe

This utterly delicious, creamy nut butter porridge will set you up for a day in the saddle as it’s packed with slow-releasing carbohydrate then boosted with protein and healthy fats to keep you going for longer. I love it with smooth organic peanut butter and passion fruit, but it’s fine to use whatever nut butter and fruit combo you prefer

Ingredients: 2 tbsps nut butter (peanut, almond, cashew or hazelnut) • 50g porridge oats • Pinch of ground cinnamon • 225ml almond milk • Handful almonds • Seeds of one passion fruit • Date syrup
Method
1 Preheat the oven to 160°C/gas mark 3.
2 Combine the oats, almond milk, nut butter, pinch of salt and cinnamon in a saucepan. Slowly bring to the boil, stirring all the time. Reduce the heat and simmer gently for about 5mins until thick and creamy. You may need to stir in a little extra water if it becomes too thick.
3 Meanwhile pop the nuts onto a baking tray and roast in the oven for 5mins.
4 Pour the porridge into a large bowl, spoon over the passion fruit, add the nuts and drizzle with date syrup.
