This Leftovers ‘Super’ sandwich is great for using up the remains of your Sunday roast, and made virtuous by piling high a rainbow of different crunchy vegetables and hummus.

There’s a good balance of carbohydrate, protein and healthy fats, plus it’s packed with ‘gut-happy’ prebiotic ingredients.

Ingredients

  • 2 decent slices of seeded sourdough
  • Slice of leftover cold pork or chicken
  • 1 tbsp hummus
  • Chilli sauce
  • For the salad
  • 1/2 small red cabbage,
  • 1 carrot,
  • 3 radishes,
  • Handful fresh mint,
  • Handful fresh coriander or parsley,
  • 1 tbsp rice vinegar
  • 1/2 tsp sugar

Methods

  • Step 1

First make the salad by combining the vegetables with the vinegar and sugar in a bowl.

  • Step 2

Spread both slices of your bread with the hummus, then add the cold meat and a little chilli sauce to one of the slices.

  • Step 3

Spoon over the salad generously, then top with the second slice. Keep any leftover salad in an airtight container in the fridge.

  • Step 4

Eat immediately or wrap the sandwich tightly in foil and pop it in your lunchbox.

Boost the protein and crunch

Add cheddar or crumbled feta, plus a
handful of peanuts for extra crunch.
