For those who like just a quick bite before they go out, you can make these banana and walnut muffins in advance: simply store in the freezer and defrost whenever you fancy one.

You can also wrap them warm in foil and pop them in your feed pouch for a little on-the-bike sustenance.

Not too sweet, I like to eat these warm with a little butter and honey or marmalade.

More antioxidants

Chop up 100g of dark (70% +) chocolate into small chips and stir in at step 3.

Add chia

Chia seeds are a great source of protein, fibre and healthy fats. Add a couple of tbsps at step 3.

Malt loaf muffins

Reduce the brown sugar to 50g and replace with 2 tbsps of malt extract. Sticky and delicious!
