Leftovers ‘super’ sandwich
A brilliant way to use up your Sunday lunch leftovers, and made even more nutritious by adding extra veg and hummus

This Leftovers ‘Super’ sandwich is great for using up the remains of your Sunday roast, and made virtuous by piling high a rainbow of different crunchy vegetables and hummus.
There’s a good balance of carbohydrate, protein and healthy fats, plus it’s packed with ‘gut-happy’ prebiotic ingredients.
Ingredients
- 2 decent slices of seeded sourdough
- Slice of leftover cold pork or chicken
- 1 tbsp hummus
- Chilli sauce
- For the salad
- 1/2 small red cabbage,
- 1 carrot,
- 3 radishes,
- Handful fresh mint,
- Handful fresh coriander or parsley,
- 1 tbsp rice vinegar
- 1/2 tsp sugar
Methods

Step 1
First make the salad by combining the vegetables with the vinegar and sugar in a bowl.

Spread both slices of your bread with the hummus, then add the cold meat and a little chilli sauce to one of the slices.

Spoon over the salad generously, then top with the second slice. Keep any leftover salad in an airtight container in the fridge.

Eat immediately or wrap the sandwich tightly in foil and pop it in your lunchbox.
Boost the protein and crunch
Add cheddar or crumbled feta, plus a handful of peanuts for extra crunch.
